Audrey had her first birthday February 11. We had an Alice in Wonderland themed tea party for her – “Audrey in ONE-derland” 🙂

The tradition goes, that on a baby’s first birthday, you make a smash cake for them. A smash cake is a small cake that you make specifically for the birthday kid. You let them eat it with their hands and essentially ‘smash’ the cake. It’s fun to watch them eat their own cake and it gets pretty messy, although Audrey preferred to eat like a lady and with a fork.

Many of these smash cakes are loaded with sugar. And while I don’t have anything against sugar, I don’t think 1 year olds need to be exposed to it just yet. They will never know that they missed out on a sugar filled cake that first year. They’ll have multiple chances in their life to try sugar. So instead of buying a sugar laden cake for Audrey, I decided to make my own.

So how did I make this cake healthy? I used fruit instead of sugar. Whole wheat flour (or you can use a different whole grain) instead of refined flour. I used cocoa powder to give it a boost of iron and antioxidants. The whipping cream (try to buy free range/organic cream), is a good source of fat, which is important for baby’s brain development.

When I looked online to get inspired by “healthy smash cake recipes,” many were made with fruit (yay) but they still contained maple syrup and then sugar filled frosting. My recipe here, is a mixture of two recipes that I found to be of the healthier versions out there, but I did put my own spin to it and boosted the nutrition even more. The two recipes I took some ideas were from – New Ways Nutrition (love her content by the way), and Love in my Oven.

So for my cake – I didn’t want it to just taste like banana bread, so I added strawberries, applesauce and cocoa powder! Yes I wanted a chocolate cake 🙂 Cocoa powder is high in antioxidants plus depending on the brand, it can be a great source of iron, which we all know babies need iron rich food.

Instead of artificial dye for my frosting, I used freezer dried fruit for the coloring, which I got that idea from New Ways Nutrition. I used Beets, which is what I happened to have on hand, but you can use really any fruit/vegetable! I ground the freezer dried fruit in my coffee grinder which blended it into dust, which made it really easy to use.

After I made my first chocolate cake, I realized I actually wanted some elevation, so I decided to make a whole other cake, but decided to skip the cocoa powder this time, so I could get a multi colored and flavored cake.

So I had two 6″ cakes. I made both of these the night before the party, then the day of, I made the frosting.

For the frosting, I used heavy cream and with a beater, I beated it until it got semi thick. Once it began thickening, I added my freeze dried beets plus the banana for the sweetener.

Once you’re ready to frost it, which I recommend not doing 3+ hours before your serve it, you’ll frost the bottom cake first, then put the second cake on top and frost them both.

I actually thought about making my cake out of breastmilk, but I figured, if other kids were going to have some, I better not use my own milk.

But, if you’d like to use your own, just replace the milk with your breastmilk. Instead of heavy cream, you can actually pump your milk and put it in the refrigerator, then skim the fat off the top and collect that, until you have about a cup worth of fat. Once you’ve collected enough fat, use the beater and beat it.

If you want to keep it dairy free – use your choice of milk for the cake then full fat coconut milk for the frosting. This frosting idea came from Minimalist Baker –you put your coconut milk in the refrigerator and let it separate, then once you’re ready to use it, open the can and skim and use just the fat portion for your frosting.

Healthy Sugar Free Smash Cake

Ingredients

Cake

  • 1 1/4 cup whole wheat flour (you can sub white flour)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup cocoa powder
  • 3 very ripe bananas
  • 3 strawberries
  • 1/4 cup applesauce
  • 1/4 cup choice milk
  • 1 egg
  • 1 tsp vanilla extract

Frosting

  • 1 cup heavy whipping cream (or sub full fat coconut milk**)
  • 1/2 cup freeze dried fruit (I used beets, but sub strawberries, blueberries etc)

Instructions

Cake

  1. Preheat oven to 350 degrees and grease 6" cake pan

  2. In a mixing bowl, sift together the flour, baking powder, baking soda and salt

  3. Place 2 bananas (the third banana is for the frosting), 3 strawberries and applesauce together in a blender and mix until completely pureed.

  4. In another small bowl, whisk together 1 cup of the fruit puree, the milk, egg and vanilla extract

  5. Add the wet ingredients to the dry ingredients and stir until combined

  6. Pour the batter into the prepared pan, and bake for 20-25 minutes, or until a toothpick comes out clean

  7. Allow the cake to cool for 10 minutes in the pan before removing to a wire rack to continue cooling.

Frosting

  1. For best results, place a mixing bowl and beater in the fridge for several hours before you are about to prepare the whipped cream

  2. Take the freezer dried fruit and put in either a coffee grinder or a blender until it's blended like powder

  3. Pour the whipped cream, and the 1 ripe banana into the chilled bowl, and beat on high with an electric mixer 

  4. As you're mixing the whipped cream, slowly add the freezer dried fruit until your desired color and desired consistency (it should be thick but smooth enough to frost your cake. Remember butter is simply whipped cream)

  5. Frost the bottom cake and once that's frosted, place the second cake on top and frost that. I recommend doing this no more than 3 hours before serving

Recipe Notes

  1. I made two different 6" pans - one had the 1/4 cup cocoa powder and my second cake did not, as I wanted to create a layered effects
  2. If you want to add some natural sprinkles, get a variety of freezer dried fruit (mango, blueberries, strawberries, coconut shavings etc) and roughly chop them and sprinkle it on the cake
